The new venue in Santarpia (from 2020), at the gates of Florence, it can be reached very well, and there's certainly no shortage of parking nearby. First point in its favor. Everything is simple and easy, with a convivial, informal atmosphere and contemporary furnishings. It doesn't get much better than this.

Monica Meschini chooses for us Lupulus (obviously the assonance with hops), Belgian beer, unfiltered, which on the label features a cute wolf pet. The dominant one is bread flavor which goes perfectly with pizza dough. From particularly floral and spicy notes – he explains to us – at the beginning you can feel the Bulgarian rose, the Damask rose, to then continue with a powdery sensation of coriander seeds. From humble origins – he defines himself as a street boy – at 14 he began working in a pizza by the slice (Pizzeria Royal), on the advice of his father. Santarpia: From Capri to Tuscany

Ours continues passionate conversation with Giovanni Santarpia. So, having learned the trade, in '91, still very young, he went to work for six months in Capri, in the pizzeria Lo scacchiera, a tough job, but certainly useful for his training. In '92, tired of being a pizza chef, he lent his services for two months to a tomato factory, and then return to being a pizza chef, given that the working conditions are even more severe. So the summer seasons resume again at the Pizzeria Royal, his “first love”. From there he moves to Calabria, then to Pescara, until reaching, in '96, Vicchio di Mugello, In the Lago Viola local, where they play live blues music (the owner is a bluesman).

He even thinks about quitting when, in 2009, he meets a series of people who will be crucial to his professional history, such as Martin Range, Sabino Berardino (Mococonut Gorge) and Elena Farinelli, from the blog I love Florence. And what a complication, considering the lockdown and the great difficulties, even just of getting around, which we all remember very well. But the young man, forged in the asphalt and concrete of the road, accustomed to face any problem he stands in front of him, he doesn't get discouraged, and he manages to get through this difficult moment unscathed, thanks to the home deliveries.

The rest is history, in new great rise, of our days.
